Fior di Latte
Fior di latte is a "pasta filata (stringy texture)" fresh cheese made of whole cow's milk ; on the food package on sale, the definition "mozzarella made of cow's milk" specifies the cow's milk quality by legal obligation to prevent misunderstanding with buffalo mozzarella.
It is hailing from Campania region and it's actually widespread everywhere in Italy. It's spherical.
This kind of cheese is consumed fresh, not over five days after its production. It's moreover the main ingredient of "caprese" and pizza, in other words the most famous dish of Neapolitan tradition. To be used on pizza, "Fior di latte" needs to contain less water and fat.
